calçot is a type of green onion native to Catalonia, Spain, particularly famous in the town of Valls. Calçots are milder and less bulbous than regular onions, with a long white stem that is achieved by repeatedly covering the growing shoots with soil.

The traditional way to enjoy calçots is during a calçotada, a festive event where they are grilled over an open flame until the outer layers are charred. They are then wrapped in newspaper to steam, peeled, and dipped in a special sauce like romesco before being eaten. This celebration typically takes place between November and April.
